Papaya Calamansi Macadamia Nut Bars
Crust:
1 cup all-purpose flour
1/4 cup confectioners sugar
1/2 cup unsalted butter, melted
1/4 cup chopped macadamia nuts
Filling:
1/2 cup sugar
5 tsp all-purpose flour
1/4 tsp salt
3/4 cup papaya puree (from a papaya about 1.5lb)
2 large eggs
2 tsp calamansi juice
2 tbsp honey
Preheat oven to 350 degrees F.
In a large bowl, mix together the flour, confectioners sugar, and butter until crumbly. Stir in the macadamia nuts.
Grease or line with parchment paper an 8” square baking pan, and press the mixture onto the bottom of the prepared pan.
Bake until golden brown, about 15-20 minutes.
In a medium bowl, mix together the sugar, flour and salt. Mix in the papaya puree, eggs, calamansi juice, and honey.
Pour the papaya mixture over the baked crust, and continue baking until the filling appears set, about 20-25 minutes. Let cool before cutting.
To make the papaya puree, peel and dice the papaya same as you would a cantaloupe. Place the papaya cubes in a blender, or mash with a potato masher. It is ok if the puree is chunky.
