Coconut Curry Chocolate Chip Cookies
Ingredients
1 cup unsalted butter, room temperature
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
1/2 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon curry powder
1 cup milk chocolate chip cookies
1 cup unsweetened coconut flakes
Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with silicone baking mat or parchment paper.
In a large bowl, beat together the butter, granulated sugar, and light brown sugar until fluffy. Beat in the vanilla and add eggs one at a time, scraping down the bowl as necessary.
In a medium bowl, mix together the flour, baking soda, salt and curry powder.
Slowly mix in the flour mixture into the wet ingredients until evenly mixed. Stir in the milk chocolate chips and the coconut flakes until evenly distributed.
Drop large tablespoons of the dough onto the prepared baking sheet, spaced about 2 inches apart.
Bake until the cookies are golden brown and slightly set in the center, about 15 to 20 minutes.
